Not a very long post this time,Ive been feeling under the weather and havent done alot of baking.
Apart from a birthday cake which ill share with you all very soon!
Onto the peaches..!
A little while ago,my hubby came in with a mini mountain of peaches. He handed them to me and said “here you go…bake something with those” Hmmm…alrighty then!
I eventually settled on this peach upside down cake,along with some muffins that you’ll maybe see soon.
The recipe comes from GoodFood though I took a shortcut only making the 1 top layer.
Sponge mix
100g softened unsalted butter
100g sifted self raising flour
1/2tsp baking powder
100g golden caster sugar
2 eggs
1tbsp milk
Topping
3 or 4 small ripe peaches
85g light brown sugar
Preheat the oven to 180 or gas mark 4 and grease and line an 8 inch tin,set aside.
Firstly prepare the peach topping,cut each in half and remove the stones and then slice each half into 4 pieces.
Now put the brown sugar into a bowl and gently mix in the peach pieces giving them a generous coating.
Arrange the peaches in the prepared tin,try to be nice as when the cake is turned out you want a nice pattern if you can get it. Set aside while you make the sponge.
This is a very easy sponge to make,its one of those all in one recipes. Simple.
Literally just put all the sponge cake ingredients into a mixing bowl and beat it all together with an electric whisk. Start on a low speed to get it going and then turn it a little higher bringing it all together to a smooth creamy consistency.
Pour the mixture over the arranged peaches and smooth the top.
Bake in the oven for 25 minutes.
When its ready let it cool in the tin for around 10 minutes and then carefully turn it out.

I was saving this post to enter into this months AlphaBakes challenge but I actually saved it too long and missed the deadline. I blame it on the horrible cold my hubby insisted on sharing with me.
Hopefully next month Ill be better prepared!
