I love valentines day as it is also my wedding anniversary and my fabulous hubby always manages to do something extra nice. Hes a keeper!
These cupcakes are my go to vanilla cupcakes, they never let me down and are very simple to make.
I use this recipe time and again, just top with any decoration that suits the occasion and you're good to go!
I know I've shared this one before but its just a reminder or for anyone that missed it.
Makes 12 cupcakes
150grams softened unsalted butter
150g caster sugar
175g sifted self raising flour
3 beaten eggs

300g sifted icing sugar
1tsp vanilla extract
Preheat your oven to 180 or gas mark 4 then line a cupcake/muffin tin with 12 paper cases and set aside.
Beat the butter and sugar in a mixing bowl for a few minutes until it becomes pale and fluffy.
Add to this the beaten eggs a little at a time,gently mixing as you go.
Don't worry if the mix appears to split,just add a tablespoon or 2 of the flour and all should be well!
Now add the remaining ingredients,the vanilla and flour then combine it all together.
Divide the cake mixture between the paper cases and bake in the oven for 18-20 minutes.
When they are pale golden and a skewer (or toothpick) comes out of the centre clean, they're ready.
Tip: If any of the cupcakes come out of the oven 'bumpy',while they are still hot gently rub the top of the cake with the back of a tablespoon to even them out.
It works for me every time.
