Homemade peanut butter cups...Nutella too!

Quite a long post this one..I took LOTS of photos but every one of them is worth it...

The peanut butter cup...I went there! Oh my are they addictive!
If you have ever had the Reese's variety (is there any other?) then you'll know exactly what I'm talking about.
Ever since I discovered them I've wanted to try making them and I finally have.
So if you love peanut butter then you'll love these.
They're  a-ma-zing and no baking required means these are great for the little ones to help you.

Homemade peanut butter cups

Note: The recipes says to use 'miniature muffin cups' and I wasn't completely sure which size was meant.

Cupcake cases

1 is the size I use for regular cupcakes so I knew it wasn't those.
For the peanut butter cups I used both sizes 2 and 3 and found that 2 definitely turned out the best looking though of course they tasted the same.

I found a recipe on Joy Of Baking and only slightly adapted it. (I reduced the sugar)

Peanut butter filling
125g smooth peanut butter
28g unsalted butter at room temperature
pinch of salt
30g icing sugar

Chocolate shell
250g dark chocolate
250g milk chocolate
1tbsp shortening (I used Trex)

Start by lining your cupcake tray (or as many as you have) with paper cases, whichever size you choose to use.

Place the peanut butter, unsalted butter, and the salt into a bowl, and heat in the microwave in 20 second bursts just until soft, but be careful as you don't want to melt it completely.
Add and stir in the icing sugar.

Now melt both the chocolates and shortening (Trex) in a bowl.

Dark and milk chocolate

Place over a saucepan of hot water or again microwave in 20 second bursts until melted and mix together.

Drop a teaspoon of the chocolate into each of the paper cases.
Top with a small dollop of the peanut butter.

Give the tray a gentle shake, that'll even out any little peaks like you can see there in mine.
Then top with another teaspoon of melted chocolate and give another gentle shake.

Pop into the fridge to set...20-30 minutes is time enough.
That's it...super easy and majorly moreish!

Homemade peanut butter cups

I was surprised at how much like Reece's they actually tasted though not exactly the same I'm afraid.

Here are the cups in the 3 cases.

No difference at all in taste,I just prefer the look of the others...definitely.

Now before you rush off to make them...as I was going along with these I decided to mix things up a little and make a few Nutella cups too. I guess I was on a choccy roll. Ahem*

I made them exactly the same way but replacing the peanut butter mixture with straight up Nutella.
I blasted it in the microwave first to soften it a little.

Now this makes ALOT of cups, but because I mixed up the size of the cases I cant give you an accurate number.
Except to say that I got 12 of the bigger ones and 18 of the smaller.
Next time, and there will be a next time...ill make them using the 2 cases in the above photo.
More for me the kids!
