Double chocolate cupcakes


Not that anybody ever needs an excuse for cupcakes...but its National Cupcake Week!
I couldn't let it slide by without sharing these cupcakes I made with you.

Double chocolate cupcakes

I've made double chocolate cupcakes quite a few times before,but this time I tried a recipe from Joy of Baking and they turned out beautifully.
I bought a chocolate mould quite a while ago and Ive patiently waited for the right time to use it...this was it!
I made these first and put them aside to set.

Maybe I should really call them 'triple' chocolate cupcakes with that cute little bar on top!
Anyway here is the recipe..(Joy of Baking)

Cupcakes
175g plain flour
2tsp baking powder
113g softened unsalted butter
 200g caster sugar
2 eggs
1tsp vanilla extract
240ml boiling water
75g cocoa powder

White chocolate frosting
150 softened unsalted butter
150g sifted icing sugar
120g white chocolate


Preheat the oven to 180 degrees and line a cupcake or muffin tray with 12 cases.

Stir the boiling hot water together with the the cocoa powder in a small bowl or a jug and set aside to cool to room temperature.
In a separate bowl, sift and mix together the flour and baking powder.
Now in another bowl beat the butter and sugar until it becomes creamy and light,then gradually add the eggs along with the vanilla and beat them in until it all comes smoothly together.
Gently add the flour mixture alternately with the cooled cocoa and mix until its all just combined.
Divide between the paper cases.
Bake for approx 18 minutes or until  a cake skewer or toothpick comes out clean.

Leave the cupcakes to cool on a cooling rack and move on to the chocolate frosting.

Melt the white chocolate in a bowl set over a pan of hot water.
Keep a close eye on it and when its just melted set it to one side for a few minutes to cool down.
Beat the butter and icing sugar together,an electric whisk comes in handy at this point!
It'll take a minute or 2 to get it very smooth and creamy.
Now add to it the white melted chocolate and beat again for a good few minutes.

Now you can spread the frosting onto the cupcakes in any way you like,but I (again) used my favourite Wilton 2D tip to pipe a swirl onto each cupcake and topped with those fabulously cute mini chocolate bars.

  3. Wow, you've made your own chocolate! I love it, they look like the one's kiddies and I buy at the store. The cupcakes looks delicious and amazing as well. Finally I'm able to comment on your blog. I've been trying to leave you comments and every time I publish it won't allow. So here it goes hopefully it works...

  5. I love the chocolate mould, it produces the cutest little cupcake toppers! The white chocolate frosting sounds absolutely delicious too. Chocolate cupcake heaven.
