Its not very often that I bake the same thing using the same recipe over and over again,I much prefer to experiment with new recipes taking inspiration from the many many fantastic bakers out there. (Thank you!!)
Its actually a running joke in my house that I find it really hard to stick to 1 recipe for a particular bake.
For example, a chocolate cake...rather than stick to 1 i know will give me great results Ill hunt and hunt until I find another that i just have to try and I just don't know why i do it!
I usually end up using the 1 I know I should anyway. Eventually.
So recently I've been going over bakes that I have done before,varying the recipe or yet again trying a new 1 in the hope to get better results.
I found this recipe on Muffin heaven and they turned out perfectly.
300g plain flour
175g caster sugar
100g melted unsalted butter
50g milk
2 beaten eggs
3 mashed very ripe bananas
100g chocolate chips
15g baking powder
3g bicarbonate of soda
Preheat the oven to 220 and line cupcake or muffin tray with 12 paper cases.
Sift together the flour,sugar and baking powder and set aside.
In another bowl mix the beaten eggs with the melted butter, milk and mashed bananas.
Add this to the dry ingredients along with the chocolate chips, and mix together gently.
Be careful not to over beat it.
Divide the mixture equally between the paper cases (they should be almost full) and pop into the oven. Immediately reduce the temperature to 180 this will ensure a nice high top on your muffins.
Bake for approx 18-20 minutes until they are lightly golden in colour.
Lovely warm or cold as a breakfast muffin or a quick bite!
