Toblerone cupcakes


I'm always looking for new cupcake ideas and inspiration,especially recipes that involve chocolate bars or other types of sweets. 
Much like the recent rainbow cupcakes I made. (I still don't know who created those?)
I recently came across these fantastic toblerone cupcakes and I thought they were brilliant!
I adapted the recipe just a little,by increasing the amount of ingredients because I was using quite large cupcake cases and I wanted to be sure I had enough cake mix to fill them.
Here's how they turned out!

The recipe worked perfectly and I'm very happy with how the cupcakes turned out.

Cupcakes
175g softened unsalted butter
175g caster sugar
175g sifted self raising flour
75ml milk
2 eggs
pinch of salt
1tsp almond extract
4 small bars of toblerone (35 grams each bar)

Chocolate ganache frosting
150g dark chocolate
175ml double cream
and
A triangle of toblerone to top each cupcake.

Preheat the oven to 180 or gas mark 4 and line a cupcake tray with 12 cupcake cases.
Beat the butter and sugar together for a few minutes until it becomes pale and fluffy.
Gradually add in the eggs a little at a time along with a little of the sifted flour mixing until just combined.
Add the rest of the flour,the milk,salt and almond extract and bring it all together.
Chop the toblerone bars into small pieces or you can pulse it in a food processor and stir into the cake mix.
Divide between the cupcake cases and bake in the oven for 18-20 minutes.
Set the cupcakes on a cooling rack and move on to making the ganache.

Break the dark chocolate into pieces in a bowl and set aside for a minute.
Gently heat the double cream in a saucepan and when its hot,pour it over the chocolate pieces.
As the cream melts the chocolate give it a stir and combine it together.
Set aside to completely cool,it will thicken up into a lovely thick and pipe-able consistency.
You can whip it up fluffy if you like at this stage but I found I didn't have to and it piped beautifully.

I used a Wilton 2D nozzle to pipe a swirl onto each cupcake.
