I think these cupcakes are so cute and I had alot of fun making them.
Ive come across them before and loved the look of them,and when recently someone close to me suggested I make them that's what I did!
I put 1 photo onto Facebook and I was amazed at the reaction,everyone loved them!
I'm afraid I don't know who the original creator of these cupcakes is,but if you do then please let me know so I can give them full credit.
I thought I might have trouble finding the fizzy belts for the rainbows,but I found an amazing sweet shop
Fizzy lips retro sweets which was packed full of goodies not very far from me.
They're easy to make,I believe anyone could have a go and they'd be perfect for a children's party.
Ill talk through how I put them together,from the baked,cooled and ready to decorate stage.
Any cupcakes will be fine for the base,I used regular vanilla cupcakes.
(Which Ill talk about more in depth in a future post.)
For the 'sky' icing
200g icing sugar
a little water
blue colour gel/paste (I used Sugarflair Ice Blue)
For the 'clouds'
75g softened unsalted butter
150g sifted icing sugar
1/4tsp vanilla extract
As many fizzy rainbow belts as cupcakes you have. I made 9.
Add the vanilla along with a few drops of water at a time to the icing sugar until you have a thick paste like consistency.
Be careful not to make it too runny or it will crack as it drys. If you find it too thin,add more icing sugar to thicken it up. Add in the blue paste/gel and mix it in well to create the perfect sky colour.
Cover the top of each cupcake with the icing,coaxing it out to the edges if you need to.
Set them aside to dry for as long as you can. I waited a couple of hours.
Whip up the clouds by beating the butter together with the icing sugar and vanilla until it comes together to a smooth and glossy buttercream. You could easily just add a small dollop to each side of the set cupcake and that would work fine but I used a piping bag with a Wilton 1M tip to do this.

You can also add more clouds if you think you need to,which I did.
I actually had a little problem when it came to piping on these cupcakes,Id just burnt my fingers quite badly on an oven tray and so I had 1 hand fixed to a bag of frozen peas!
