I've never made these before and I very rarely make muffins but the positive reaction I got from these makes me want to make them again.
With different fruits...I wonder if strawberries would work??
The following recipe makes 6 quite large muffins,but they really could have been even bigger.
Next time,Ill double the mixture and get 8 or 10. Ill let you know!
200g plain flour
150g caster sugar
125g fresh blueberries
75g unsalted butter
75ml milk
2tsp baking powder
1 large egg
pinch of salt
Preheat the oven to 180 or gas mark 3
Line a muffin pan with paper cases,then rinse the blueberries and set aside.
Sift the flour,baking powder and salt together in a bowl and set aside.
In a separate bowl,beat together the butter and sugar until it combines.
Whisk together the egg with the milk and gradually add this to the butter/sugar alternately along with the sifted flour mixture.
Combine it all together and then add all the fresh blueberries.
Stir them all in,the muffin mixture will be stiff.
If you find it much too stiff to stir in all the berries,add a tablespoon more of milk.
Fill up the muffin cases,dividing the mix between the 6 cases.
You can see that my cases aren't as full as Id have liked but I did use big ones.
Smaller cases? Or more mix? Hmmmm.
Anyway.
Bake them for around 20 minutes. But don't forget about them and leave them much longer than that.

Let them cool on a cooling rack and eat. eat. eat. You get the idea.
Some of the blueberries had leaked out of the muffins but that didn't matter. I actually quite liked that.
