I've had some lovely Lime and coconut cupcakes on my agenda and they required a lime curd filling,so apprehensively i got to work.
I've never even attempted to make anything like this before so was wary about the outcome.
But it was so easy! I was a little disappointed in the colour as it looks more like a vibrant yellow!but...the tangy tongue tingling taste ( say that fast!) more than made up for that!

You will need
juice of 2 large limes
125g sugar
4 egg yolks
pinch of salt
60g unsalted butter,cubed
finely grated zest of 1 large lime
In a heavy saucepan,whisk together the lime juice,sugar,egg yolks and salt.
Cook the mixture over a medium heat constantly whisking until it becomes thick enough to coat the back of a spoon. Be careful not to let it boil or it may become lumpy.
Remove the pan from the heat and 1 piece at a time,add the butter and keep whisking until the mixture becomes smooth.
Pour the mixture into a bowl through a fine sieve and then stir in the grated lime zest.
Cover the bowl with cling film or food wrap and store in the fridge until set.
Time can vary but I left it overnight.
Very easy and very refreshing! I think i'll make a lemon curd next time.
I'll follow this post with the cupcakes that i made this filling for...as long as they turn out as expected anyway.
They just came out of the oven and so far so good :)
